Whether designing your own wedding cake, or designing one for someone else, the process involved in making sure the end result is just as expected involves being able to communicate properly. In working with a Western theme for a wedding, and
matching wedding cake, you must know how the entire wedding and reception is envisioned. This is important so the cake is a reflection of the entire event...since it will be one of its visual highlights.

1. Sit down and talk to the bride and groom about how they envision their wedding cake. Ask specific questions about things important to the both of them, such as hobbies and interests. For example, if the couple enjoys the rodeo, take note of that joint interest. Consider asking the couple if they like theme ideas such as cattle ranches, cowboys and Indians, lassos, desert scenery, bull riding, or horseback riding. Take notes about which topics most interest the couple.
2. Have the couple taste sample cake flavors, fillings and frosting. Make sure to let the couple know which colors of frosting can be colored to match the them of the cake. For example, if the couple seems interested in a rodeo or barn theme, show them the shades of brown that will be available for the cake based on the ingredients you routinely use.
3. Invite the couple back for a second meeting in one week. By the time of the meeting, have colored sketches of wedding cake options prepared based on your initial meeting. Make sure to use Western theme ideas beyond those mentioned during the meeting. Know that you can always save all cake sketches for use at a later date or for another wedding.
4. Show the couple the top four or five cake designs you've sketched out. Make sure your sketches are in color to represent how the final cake will look. Include details on the sketch sheet of cake and filling flavor combinations. Allow the couple to look at the drawings in private so they can honestly discuss what they like and dislike.
5. Ask the couple to choose the top two designs. Talk to them about which parts of each cake they prefer and take notes. Come up with a final sketch based on this input. Invite the couple back for a final meeting to make a final selection. Have the couple bring fabric, flower and decoration samples if you'll be incorporating the wedding theme colors into the cake's design. For example, even if you make a wedding cake with a farm and barn theme, you can add splashes of color throughout that match the bridesmaids' gowns. Ways to include pops of color include frosting or fondant flowers along fences, colored bandanas around the necks of cowboys and horses, or even stripes and dots on areas of the cake to help tie it in to the rest of the reception.
